Even *if* they find a way to remove the UI, people will mod it right back in.
We should step back a bit and look at the "ultimate goals" a player is told or encouraged to strive for - max level, best equipment, so on and so forth. These players will incorporate anything that facilitates these goals - TeamSpeak for more effective coordination, thottbot.com to find out which quests give the best blue equipment for the effort needed, UI Mods to see exactly what they need to be doing to the enemy, who they should be healing, how much to heal them, how much to buff/rebuff the raid, etc.
Unfortunately, as much as you're pushing for something "greater" than the "kill-the-lootbag" experience - it's pearls before swine, for the most part methinks. Also, another thing to keep in mind is that "fun should trump 'reality'" . . .
